A Deer Valley Dream Getaway

Our first vacation of 2021 was to no other than Deer Valley, UT. We traveled to Park City last year for Chris’ birthday and after discovering the beauty that is Deer Valley, we couldn’t wait to go back. The weather was a perfect mix of sun and snow, we couldn’t have asked for better!

I’m already missing the days filled with cheese fondue and spiked hot chocolates!

Airport to Hotel Transportation

We used Four Seasons Concierge Transportation and it was excellent. Our driver was on time, super friendly, and the entire cost is paid ahead of time so you don’t have to deal with tips or confusion at the time of your pick up. They will also provide water, ice, and stops along the way as needed.

 

Where we stayed

Last year we stayed on Main Street and it was in close proximity to the dining and shopping in Park City, but our dream was really to stay at the Montage Deer Valley. Since our other planned travel from last year came to a halt, we used our vacation savings to splurge on accommodations at the Montage this year! Yes, it’s pricey. The staff and property was worth it, however. They have the infamous Veuve Cliquot yurt on their property which is a MUST see, they offer nightly s’mores on their patio and tubing daily on property. There is shuttle service to town and the other Deer Valley hotels, plus you can use one of their cars to transport yourself during your stay, as well.

Some other amazing hotels in the Deer Valley area that I would highly recommend are St. Regis Deer Valley and Stein Eriksen. Each of these hotels offer something different and are luxurious and comfortable with ski in/out capabilities.

We booked massages during our stay at the Montage and they were excellent. The experience is a little different than in the past, due to COVID restrictions but their staff are amazing. The indoor heated pool and jacuzzi are open but steam room/sauna and locker room jacuzzis are closed, unfortunately. The lunch/drink service at the spa is also on hold, so that was a bit of a bummer, but we still enjoyed ourselves. It made it easier that we were guests at the hotel so we could head back to our room if needed.

 

Where we ate

Stein Eriksen– excellent for après and they offer Alpenglobes for rent which I highly recommend! $200 to rent, no minimum required. They are heated, you can play your own music, and watch the snow fall around you. Try the cheese fondue, grilled cheese, and chili- they are all very special dishes! Also don’t forget to order a spiked hot chocolate!

Apex (Montage)– we had Chris’ birthday dinner here and it did not disappoint. The Montage has an in-house pastry chef that created this amazing cake for him as well!

Veuve Cliquot yurt (Montage)– the decor is enough to make you want to stay! It’s cozy and adorable, with a great soundtrack to go with the environment. They’re only open from 12-4 daily so be sure to get there on time and get a seat. Funny story- we walked in super excited, I scanned the menu for their Veuve bottle choices and don’t see anything. The waitress comes over and we say “we’ll have a bottle of Veuve”. To our surprise, the entire state of Utah was apparently out of Veuve. I know, I know #ChampagneProblems. Of course they have other champagnes on the menu, but it was ironic being in a Veuve yurt drinking non-Veuve champagne. Get the charcuterie board and popcorn!

 

Yama Sushi (Montage)– order the ahi nachos, they are the best I’ve had! You can’t go wrong with any of the sushi on the menu. Right now the restaurant seating is located within the Vista lounge so you’ll hear the live music while dining, which is a nice touch.

Riverhorse on Main– get the lobster bisque! Such a cool venue, live entertainment is offered, make sure to book ahead of time (weeks) because their tables fill up quickly!

Five5eeds- slightly off the beaten path but SO worth it! Fresh and all natural menu here with a clean setting that is Instagram-worthy. Get the green juice, it’s the best I’ve ever had!

High West Distillery– a must-see on Main Street. Try a whiskey flight and their soft pretzel!

St. Regis Deer Valley– ride the funicular up to the bar/restaurant and enjoy the views. It is truly beautiful! There is outdoor seating under a heated patio where you can enjoy amazing views and don’t miss the champagne saber tradition at 530pm nightly! The burger is AMAZING and if you’re a fan of french dishes, the Croque Madame does not disappoint!

Grappa– cute little Italian place at the end of Main Street. Make a reservation ahead of time and be prepared to indulge! Super romantic for a date night.

 

Skiing

Deer Valley is a ski-only mountain, which I LOVE, because it means no snowboarders zooming by me while I cringe and ski at a snail’s pace. They also limit the number of skiers daily. Combine this with COVID restrictions and a trip taken during the week… it was literally my dream! There were times that I looked around and didn’t see one other skier!

We used Compass Rentals based out of the Montage and they were excellent. The boots were heated and it was so easy to step right out onto the lift. We took a lesson on our first ski day and it was really helpful for my anxiety levels. Good technique is the basis of everything I do in life! Chris, on the other hand, just flies down the mountain with ease.

Pro Tip: purchase your lift tickets well ahead of time, they sell out! 

 

Ski Fashion

Fera Style– Chris and I both sported ski outfits made by this female-owned brand and were highly impressed! Not only are their threads super comfortable, they are WARM and fashionable. I am wearing the Kate parka with Brooke stretch bib and C is wearing the Julian parka with Verbier pant + suspender. I also have the Scarlet turtleneck which was perfect for the après events!

Krimson Klover– another female-owned brand based out of Boulder, CO that I tried for the first time this year! I wore the Sunrise base layer underneath my ski pants and jacket. It hugged nicely while still appearing flattering AND kept me warm. The Krimson Klover brand is run/designed/managed by women. The brand focuses on technical details and pockets galore, which was helpful for skiing but easily transitions to drinks after! Their brand is also considered sustainable due to the fact that they select superior quality, natural fibers from sustainable sources across the globe that respect animals, employees and the environment.  Quality over quantity here, for sure!

Where to shop

Cake- my favorite! A cool blend of trendy and classic. Rag & Bone, Isabel Marant, etc. Plus there is a cute skincare store connected where they also sell luxe pjs.

Gorsuch- pricey is the main descriptive word here but a gorgeous boutique with unique pieces. They also sell skis and helmets/goggles, etc

Free People- bright and airy store with tons of options

The Collective- amazing home decor finds plus designer denim and other unique fashion!

Pro Tip: hit up the consignment stores, you will find some bougie ski fashion for a great price!

 

This trip was filled mostly with food and relaxing; we needed it badly! Plus, we felt safer laying low this year given the current times. Honestly, what better location to relax and indulge than a beautiful, snowy location like Park City?! I highly recommend a trip and am happy to provide more recs anytime!

All things Nespresso

It’s no secret that I am a coffee lover. I always have been, and likely always will be. But… I am very particular about my daily coffee. Over the years I have graduated from watered down coffee with extra sugar and creamer to homemade lattes using our Nespresso machine.

We own both Keurig and Nespresso machines, but I prefer the latter, to be honest. I usually save my Keurig coffees for when I’m on-the-go to work. It took me a while to figure out how I take my (grown up) coffee, but once I did it was smooth sailing. I’d like to let you in on a little secret… it doesn’t have to be fancy or difficult to prepare! Oh, and… it’s all in the FOAM (in my opinion).

MACHINE

Let’s start with our Nespresso machine. We have the Vertuo duo– which makes both espresso and coffee. I have no complaints here! We don’t have the biggest or most fancy machine, but it’s also not the smallest either. It’s easy to use (similar to the Keurig) so it’s less intimidating, even though the coffee is for more advanced drinkers.

C has a smaller machine for his office, that he loves equally. The pods are different, but are available in similar (if not more) locations than I list below.

 

PODS

We are lucky enough to have a Nespresso boutique close to home, so it’s easy to pick up these pods on-a-whim, but Nespresso has always had a great online ordering system. Luckily, there are some other options if you don’t have a boutique nearby.

There are a few other locations such as Target and Walmart, that offer Nespresso compatible pods, but they may not be Nespresso-specific coffees.

MY RECIPE

I am quite sure that my coffee recipe is THE most popular question I get on social media. C definitely coined the recipe (if you want to call it that), and perfected the foam. It really is all in the foam. So you NEED a frother to make this glorious cup of coffee.

It really only requires THREE ingredients. Coffee + Frothed milk + Cinnamon.

I am sensitive to dairy, so I prefer an almond or oat milk. I have been using Kirkland unsweetened almond milk for years, because it makes the best froth I’ve found. Trust me when I say… I went through countless other almond milks before I came to this one. While I like this brand, I am feeling motivated to start making my own, though I don’t love the idea of straining. TIP: Cashew milk does not require straining! You simply soak the nuts in filtered water, and blend. You can also add maple syrup or agave if you like.

I received an upgraded frother for Christmas so lately my foam game has been ON POINT! No shame there. I used the Aerocino frother that came with my machine for years, but this one has truly taken my foam up a notch.

Pro Tip: hit the button one more time after it brews your first cup! You can get a little more life out of those pods so that your cup is more of a 1.5 size. I will say, you can’t get two full cups out of a single pod without it being watered down, so if I’m craving a full second cup I will just use another pod.

 

FAVORITE PODS

I can take down ANY nespresso flavor, but I definitely have my favorites. My go-to coffee flavors are Vanilla Custard Pie, Hazelnut Muffin, Caramel Cookie, and Melozio. If it happens to be the fall season, you best believe Pumpkin Spice Cake is in my drawer too! This year around the holidays they offered Peppermint Pinwheel and Amaretti and they were both delicious. Chocolate Fudge was also new this year, and I’m told it will be on the menu year-round!

If we’re talking espresso, Voltesso is my jam. Chris and I love to have a midday espresso when we’re off together on the weekends. We typically have decaf in our stash also, when we crave an espresso moment with dessert, but it’s too late for the caffeine.

 

ACCESSORIES

The perfect coffee cup is a MUST in this household. I’ll admit that I impulse buy coffee cups regularly. For every new one purchased, I get rid of one, however. These are double wall insulated glass espresso cups and we own a few different styles. I love the elegance behind a tall glass coffee cup, so these are perfect if you want to elevate your next coffee creation! Add in these cute spoons to swirl your milk and spices. I love this drawer to keep all the nespresso pods organized!

How to improve your mental focus and avoid feeling overwhelmed during the final months of this year

We are winding down an absolutely insane year and it has been a lot! Mentally and physically I know many people are exhausted and confused and there is still no end in sight. The harsh reality is that 2021 does not promise to be necessarily better or more normal at this point. The good news there is that we don’t need to wait until the new year to regain focus and purpose. 

Dreading the holidays is a sure sign that we need to refocus or get a bit more grounded and now that we are into November, I think it’s time we take our current experience into our own hands. If we take the time now to refocus and re-energize we can hit the ground running come the new year.

We are coming into a typically very busy time of year but with all of the current protocol it could actually be a very slow season. During the holidays, especially this year, I think you should do what’s best for your mental health. Maybe that’s socializing at every safe opportunity you get. Maybe it’s watching every Christmas movie on Netflix. Personally I am looking forward to plenty of cozy nights with red wine and a candle burning, but my day-to-day is still go, go, go and I like keeping a routine always. In this blog I am going to go through some of the small changes I am making to keep my mind clear and my spirits high!

 

Eliminate Email Overwhelm

One thing that has been getting to me lately is constant emails. Seriously how did I get subscribed to all these random retailers?! I am one of those people that can’t stand  when there are number notifications on my phone, so all the emails can get a bit distracting. Did you know the average person spends multiple hours a day checking and filtering through emails? Now don’t get me wrong, email lists are a fantastic way to reach out to your audience and get your content in front of them but as a consumer I have realized that I need to do some serious Marie Kondo on the old inbox. So I am unsubscribing from any and all unnecessary emails because they take up unnecessary time in my life.

I started by immediately unsubscribing as emails came in. I think I have 100 less emails a week from unsubscribing to Victoria Secret alone. Unroll.me is an amazing tool which sorts through your inbox, identifies all the subscriptions it can find, and let’s you unsubscribe with one click! Now, I’m no tech wizard but I heard that when you unsubscribe sometimes your information can still be shared with other parties so you may receive even more emails. If you see an option make sure you choose, “don’t share my info and unsubscribe from all emails”. 

Second, peek into the junk inbox. Luckily our email service providers do their best to not let any real junk get through the cracks and into the main inbox but I’m sure you’ve lost some very important emails to Spam by accident! If you do notice there are important emails going to your junk constantly then make sure to add the email as a contact in your phone and they should be re-prioritized and be sent to your primary inbox!

My third tip regarding inbox overwhelm is to try and spend scheduled specific amounts of time in your inbox, for example, 9am-10am and 3pm-3:30pm. Depending on your line of work this might look different but dedicated time is more effective than jumping in and out all day. Maybe in 2021 I’ll go so far as to turn off my inbox notifications.  

 

Keep Your Friends Close and Your Self Care Closer

Hone in on your circle during this time and make sure you are all taking care of one another even if it is from a distance. The holidays are always a reminder to focus on what really matters to us. With our circles kept small I am focusing on building strong relationships with the ones who mean the most to C and I. This means trying a little harder to check in with family and prioritizing the relationships that are growing with us and focusing less on the ones that don’t. Going through this year and learning to navigate relationships that don’t fully serve me has been eye opening as to how I have grown as a person. I have seen it prove very impactful to decide what type of energy I want in my life and if they don’t align, they need to go. I have decided when I can mentally handle certain energy and when I can not. I have many friends and family I care about that I don’t see eye to eye with on almost everything, that does not mean I have to care about them less. I have learned to control how their opinions affect me and what impact they make on my mental health. This takes a lot of practice and it can be full of tough decisions but I promise you your mental health and heart are worth it. If this is bringing a few specific people to mind for you then it is likely time to have some not so appealing conversations, or slowly back away and cut out the negativity in your life. Assess your circles!

 

Practice Saying No, And Remember Those Who Love You Won’t Mind

As humans we are wired to please others and are often taught it is selfish if we do anything for ourselves. This belief is especially perpetuated to women. In my opinion mental health and life goals come before pleasing others. When you are asked to do something, take time to evaluate your schedule, then give an answer. I first learned how to say no while going through med school, I was very focused and prioritized my schooling and had to say “no” a lot. It wasn’t always fun, especially passing up fun social events in the moment. Of course I had some FOMO but it was worth it in the end.

A great quote I saw this year is, “Say no first, then convince yourself why it’s a YES”. If your instinctual reaction is just to say yes to plans, favors, etc. and then you find yourself resentful of the commitment, it probably should have been a “no”. Additionally if you’re the person who says “yes” to a plan you already know you’re going to bail on then you need to get your boundaries in order and start saying, “no” or “I’m going to pass this time” right out of the gate! By saying “yes” to something we don’t want to commit to we are just adding to our own overwhelm and anxiety. 

I try and live by my rule of prioritization. When you are honestly prioritizing your own schedule and are able to get everything you need to do done to make you feel whole, complete, and fulfilled, then you know if you can help others or take on more. I have found it helpful to make a list of my own stuff and then see IF I can make time for something of someone else’s. Don’t barder your time at other’s convenience. It’s okay to graciously say “No”! 

 

Make Time For You

All in all you will always be your number one priority. Yes this is tough to make true but we are the only ones that look out for ourselves. Bottom line, to keep your overwhelm levels in check your life has to be about you! I want you to make a list of 10 things that make you the happiest; it can be anything. Then make sure you do one of those things daily, it will brighten your mood and you will know you are doing something just for you. It is said that you should have 3 hobbies in life; one that makes you money, one that lets you be creative, and one that keeps you fit. What can you do during the holidays that lights you up and what can you do that keeps you moving? Chris made a Pumpkin pie over the weekend and by him choosing to do this just for fun it brought (us both) a lot of joy! I love getting dressed up and finding cute new fashion trends that suit my taste and lifestyle. I also find a lot of fun in spending my time with my Frechies and C or friends and family. Just because I am saying make time for you and do what makes you happy doesn’t mean you need to do it all alone.

Ending 2020 Strong and Happy

This year will not make or break the rest of our lives, we just have to continue to adapt to the curve balls and celebrate all the wins – big or small. Let’s prioritize ourselves and the things that mean the most to us over the next 6 weeks. I will be focused on using the tools I know work best for me and will be taking it one step at a time through the holidays to make sure I stay where I need to be mentally and physically.

Strategically plan all your “can’t miss” traditions now and then make time for all the wonderful holiday activities. Take it one day at a time but allow the most time for things that are important to you. Take time to slow down and appreciate everything we have currently and are still able to do. The world is changing more and more each day, make sure you are adjusting to the changes with your best interests in mind.

We are never able to pour from empty glasses, fuel yourself up and spread the joy to all those you care about and maybe a few strangers. Random acts of kindness are an easy way to warm your heart and can completely change someone else’s day! My favorite one used to be paying for the order behind me at the drive through, though lately I haven’t gone through many drive throughs. Always be gracious to others, you never know what they are going through in these times.

What it means to trust your intuition and go with your gut

There is nothing like that feeling when you know exactly what decision to make, your gut instinct firing full steam ahead. Unfortunately, it can often be followed by an instant thought of doubt, or the feeling is oh so subtle to begin with. This is usually your conscious brain fighting with your intuition, it can be very quick to jump in and shut down decisions. This counterative thought is usually a safety net and the flight response when something is uncomfortable. For me learning how to trust my gut has been so important for life changing decisions from pursuing my relationship with Chris to saving lives in the hospital. 

Throughout this blog I’m going to talk more about what your intuition really is, how to trust it and ‘head vs. gut’ decisions.  

What It Really Means to Trust Your Gut

A gut feeling can be scary sometimes but what it really is, is our intuition surfacing and telling us the answer, which we sometimes feel as a somatic (body) feeling.  You know when you are taking a multiple choice test and you aren’t 100% sure but you choose one answer, then minutes later you go back and change it and then it ends up being wrong because you had it right originally? That was likely you not trusting your gut. Somewhere your mind knew the answer but because it wasn’t front of mind, or you weren’t able to recall it exactly you started to overanalyze. GUILTY here!

Our subconscious is a very powerful tool but it can be hard to channel. Intuition is not always fight or flight, it is you being in tune with what is going on around you, like thinking about someone and then two minutes later they call you or taking a different way home from work and missing a traffic jam. Intuition guides you through life without you even knowing it and most times you don’t get to know why you made one choice or the other, it just works out. Our subconscious is picking up and processing a million details that our mind isn’t noticing.  

 

Getting Quiet to Tune In Through the Noise 

It can be hard to listen to your gut when you have routine or there are outside factors influencing your decision. There is a lot of noise in this world that can make you doubt your choices and direct you to stick to the status quo, or simply make a decision based on what you think someone else would do or want you to do. Let’s be honest though, a lot of us would not be where we are today without listening to ourselves when making big decisions.

At some point you may have chosen a life partner, a house, where to go to college, to quit a job, to invest in something. In all the big decisions we reflect on as ‘good’ we probably also associate them with trusting ourselves and doing what we needed for us! If we feel like we made the wrong decision it’s probably because something else influenced us. Society is influencing us and pushing a specific way of life in our faces creating distractions from what we really want and it can be hard to see through this. That is why I find it so important to get in tune with your mind and body and ask yourself what you are really needing and wanting out of your life and figure out your way to get there! Write. It. Down. Read it. Reread it. 

 

Head vs Gut Decisions 

It is funny how physically and mentally your brain and gut are two of the most influential systems in your body. Have you ever heard someone say that death starts in the gut? This is more accurate for the physical side of body degeneration and proves that the brain has a say but the gut has control. Your brain is full of thoughts and projections but the gut is powerful and as we know the heart ‘wants what it wants’. 

I think that our gut makes a decision before our brain can think. The brain/mind supports us in reason and logic which is obviously super important! We can logic through pros and cons, the information we know etc. We can’t reason with our gut or review the intuition. Our gut and our brain are often in line, they are not always fighting each other! Your gut says, “yes” and your brain follows with “here’s why”.  As you go through life and learn to trust yourself more it will get easier. I promise. It can be easy to always lean towards the safer option but keep that intuition active and go with your gut. 

 

Trusting my Intuition as an ER Doctor 

As a doctor being able to listen to my gut is very important. There have been a number of times when I ordered a test or had a tiny sensation that told me to go down a path that I wouldn’t usually choose but ended up finding something very dire to my patient. There are times when I didn’t listen to that voice, and sure enough something undesirable happened. It only takes once or twice to realize you don’t mess around with second guessing, in medicine. Trusting your gut in the medical field is very important and it helps to make quick decisions.  It can be easy to get swept up in co-worker or patient family questions and demands but trusting yourself and what you know will get you far better results. It can be hard to go against the obvious steps and protocols upon first examination of the patient but it is important to also consider all possibilities. Use your experience and listen to that little voice inside your head to do your job properly and advocate for your patient.

How Self Trust Helps You Make Big Life Decisions

It’s one thing to practice listening to your intuition to make a decision about which restaurant to go to and another thing to allow it to guide you in big decisions. There will be a time when that feeling is so prominent even when you, yourself, knows it is not the “normal” decision. You know it’s going to be hard, or scary and that’s your mind fighting back. But as long as those consequences aren’t hurting you or someone else intentionally, take the leap! Yes it’s normal to feel nervous, excited, and a bit scared when getting out of our comfort zone. You need to be your own hype girl/guy in these situations, talk yourself up and commit. 

Trust me, not following through with something you know you should do can be harder to cope with in the long term than any blow-back you might get for doing what you wanted to do in the first place. Your gut is just as much you as your brain and is there to make the best decision with you in mind. 

There is always a path for us, and it’s constantly changing based on every micro-decision we make. I can say for sure that when I trust myself, my decisions play out better. We don’t have to justify our choices, especially the ones we don’t understand, we just know. Trust your gut and keep moving forward in the path you choose, make yourself happy and put yourself first! It may not be tomorrow, or the next day, or even a few months later, but at some point in the future you will understand why you made or didn’t make a specific decision. Keep making the “right” decisions for you, and you will end up in a dreamy place you could have never imagined. It may not be easy getting there, but you can do it!

How to Make Halloween Fun This Year

Covid-19 Halloween

Halloween is a yearly tradition almost everyone in the American culture looks forward to, no matter the age! Getting all dressed up, hanging with friends and eating too much candy – who wouldn’t like that?! Unfortunately along with many other things this year Halloween will look a bit different because of the pandemic. The last thing you want to do this Halloween is be with large crowds in close quarters. This is sad but it just means it is time to get creative and I am here to help you out!

Stay At Home for Halloween 2020

I know, I know, we have all been “staying at home” for MONTHS but this is just the way it is. I mean we all strive to make our home space super lovely, now at least we know we have really got our money’s worth out of it. What’s one more extravagant theme night to add to the photo album? My suggestion is outdoor movie night, weather permitting of course! You can rent or purchase a projector, hang up a white sheet (hopefully not stealing anyone’s ghost costume here) or rent a screen, and you are good to go. I know it takes a little more finesse than that but I think anyone can pull it off and there are endless amazing Halloween movies to choose from that are on the movie service providers you already use. 

If you really want to step up your game this could turn into an outdoor camping night – if you dare to sleep outside after a scary movie, BRAVE. A less scary terror-themed way to make things exciting is to set up a popcorn/candy bar and tons of comfy blankets and pillows. You could surprise your partner with this romantic night or both plan to pick out a movie and treats for each other!

We had a small outdoor movie night last weekend and watched Hocus Pocus (C and I’s fave). We rented a projector and screen from a local company, and had it delivered to make it easier on our schedules.

 

I scoured social media and amazon for the cutest accessories to elevate my charcuterie board! We ordered a TON of pizza, and set up a candy and popcorn bar for dessert. I like to keep the theme going with the bar, and chose a bunch of creepy-looking wine bottles with our pumpkin wine glasses.

Autumn Activities

There is still so much you can do aside from big parties and stuffing your face with chocolate to make it feel like Halloween. If you are really down in the dumps you can choose an Autumn/Halloween based activity for each night and cap off the week with a crazy Halloween Saturday!

Activity Ideas:

  1. Visit a pumpkin patch
  2. Decorate/Carve Pumpkins
  3. Visit a Corn Maze
  4. Rake leaves and jump in them
  5. Raid Dollar Tree and decorate your front porch/door
  6. Haunted Houses (many are drive thru this year)
  7. Movie Marathon
  8. Go apple picking

There are so many activities you and your family can still be doing amidst everything, you just have to be willing to think outside the box a little bit! We are still all in this together, we are all trying to navigate life in this new way but it won’t be going away anytime soon so let’s get used to it and make the most of it. 

 

Leaving the House on Halloween in 2020

Wait what?! Leave the house? Yup! There are many things you can still go out and do that aren’t trick or treating. Corn mazes, drive thru haunted houses and pumpkin patches are still open for business and they need your support to get through these tough times. Obviously follow the precautions; wear a mask, wash your hands and social distance but also get lost, have fun, and if you’re being safe the only fear you should feel is from the scary creatures of Halloween night. 

If you are more in the adult scene, (no kid zone) and up for it, get together with close friends, (small groups of course) and have a themed dinner party. Every city/state has different laws of social gathering groups but if everyone adheres and feels safe then a get together should be a no brainer. We can’t all stay cooped up, it is not good for our mental health or physical health; choose your exposures but still have fun and enjoy your life. Pick a theme everyone is into and you’re set! It does not have to be expensive.

Themes could be:

  • A murder mystery
  • A favorite tv show/movie of the group (ex// Harry Potter – think of all the food)
  • A culture based party – tacos? Count me in
  • Bite Size – vampires and appetizers – no one needs a full balanced meal
  • Choose a color – dress, decorate, eat and drink only things of that color
  • A red wine tasting – decorate the table with fake blood

 

There are so many creative ideas on pinterest for themes and appetizers/foods – one search and you will have a whole party planned for you at your fingertips! I may have to try my hand again at a couple Halloween themed charcuterie boards, one with meat/cheese and one all candy. I recently botched a cheese carved creepy cross, but I think I could try again. 

Be Smart, Be Safe, Enjoy 

I’m sure I don’t have to say it but just so we are all on the same page, Halloween masks don’t count as masks. They have a hole in them so you can breath. A hole is not going to do anyone any good. Maybe this is the Halloween we just omit scary masks and can actually see who each other are. That may be the worst part of a Halloween party, there is always that one person walking around in a full coverage costume and you can’t figure out who they are. Ugh, gives me the creeps just thinking about it, I watched way too much horror and murder mystery. Regardless, if you’re going out wear a compliant mask, under your mask.

Why I Never Diet

What the Fad?!

Oh diet culture, what a fun place to hangout – NOT! Society has corrupted the word diet and psychologically trained people to think it is some crazy way of eating that usually promotes weight loss. Diet has two different definitions when you google it:

 

  1. the kinds of food that a person, animal, or community habitually eats
  2. a special course of food to which one restricts oneself, either to lose weight or for medical reasons

 

See how different those are! The first one is simply stating that diet is whatever is consumed by the being, so whatever you choose to eat is considered your diet. Now the second one, this is where people get confused and think there needs to be some sort of fad followed because when they eat it has to be focused around a certain mindset or list of rules. These toxic mindsets always have a body image agenda and monetary attachment to them, such as a salad means you are eating “healthy” and cookies make you feel guilty. They don’t make you feel guilty they make you feel like you need to feel guilty because of the connotation attached. Nutritionally a cookie isn’t much different than white toast with jam which some might call a healthy breakfast. So we have to first stop thinking of eating as good or bad and just fuel our bodies with what it needs! 

 

The good old American diet

As most of us know our food has changed drastically over the years – even our parents had access to very different food options, mainly less processed. Foods now can be full of fillers, preservatives, synthetic colors and artificial flavoring. America is known as one of the worst “diets” in the world because our food culture is based around fast food and large portions. Eating to be satisfied and eating to feel full are two completely different things. The food hype these days is so polarizing, centered around crazy over the top foods such as insane milkshakes that have a donut as a topping or a burger the size of your head, but just as soon you’ll see an ad for a green juice or age-reversing matcha. Fads give everyone this feeling like this is what they need to be eating to look cool and be trendy on social media. Of course trying weird things like deep fried oreos is fun but our fast food culture contributes to a skewed look at what a portion should be. 

Since we are not necessarily set up for success I’ve tried to take a step back and understand food for what it is. Trust me I’ve been very much sucked into the media diets. Now that I understand food more, one motto I keep coming back to is ‘eat whole foods’. That means one ingredient, ex// spinach, chicken, quinoa. Of course it’s not always that simple. I don’t necessarily try and avoid food additives altogether but common preservatives to recognize are: Benzoic acid, Calcium Sorbate, Erythorbic Acid, Potassium Nitrate, and Sodium Benzoate. Preservatives are used to slow down bacteria and mold growth and they are mostly found in processed foods. The easiest way to avoid this is eating fresh food. Your almond milk doesn’t really need sodium benzoate especially if you are drinking 2L in 2-4 days. Opt for fresh made from a nearby cafe or DIY! 

 

European Classics

The diet world over seas is very different in many senses but if you have been to Europe you know it’s carbs, carbs, carbs, pasta, breads etc! So how do some of these people remain so slender and healthy? It is all about pure ingredients, the best they can get their hands on and classic preparation, passed down for years. I read this book called French Women Don’t Get Fat; it is about a French woman who fell victim to the American diet when she moved here for school, and how she made her way back to what she knew as a French woman. The French have been eating breads and pastas for years without becoming overweight. The secret? No guilt or over-indulging but eat for satisfaction. Focusing on quality, variety, balance and always fulfillment. This includes eating for hours with friends to enjoy their company, NOT to stuff themselves. I know it sounds too easy but the concept really comes down to dropping the stress around eating and listening to your body and what it needs. 

Portion sizing is SO SO important and should be taught young. The “growing child” does not need to necessarily eat more than usual but instead should be encouraged to fill their body with better food to fuel it. In Europe you will find large portions but they take their time eating and appreciating the food, everything is slow, appreciated and allowed to digest.

 

Everything is Better in Moderation

Moderation is the key to life right? Well when it comes to food I truly believe it is. I mean if you eat deep fried oreos everyday they are definitely going to lose their charm. But total restriction of any food is likely setting yourself up for failure. The second we put something on the ‘no’ list or ‘can’t eat’ list we want it more! Unless you feel good about the restriction it will likely come with some major challenge and likely a break in the rule and then….guilt. There is so much guilt that can come with food and it is a daily struggle, we are constantly being bombarded with body images through social media that the mindset has corrupted our relationship with food. Food is essential to living and yes there are foods that are “bad” for you but it does not mean you are forbidden from them. 

Making a choice to eat a certain way that is outside of just your health is very common these days. For example, a lot of people are restricting certain foods for their impact on the environment. This is a noble decision but you do have to remember your body is yours and you only get this life once, so make sure you are taking care of yourself first. Eliminating foods comes with the risk of eliminating certain vitamins and minerals so if you feel unwell after a diet change get some blood work done to make sure all vitamin levels are optimal!

 

The Exercise and Food Balance

Exercise and food seem to have a hand in hand relationship. While it is very important to exercise (yes you should be moving everyday they don’t need to depend on each other), you don’t need to “work off” last night’s dinner or “earn” tonight’s happy hour.

I know most people have heard of the 80:20 rule but it has been applied to so many different things, so let me explain. When you are looking at the health of your body or body composition goals the focus should be 80% on a clean diet and 20% on a few indulgences. Exercise should be something to enrich your body with and support your diet. Also from the flip-side- exercise requires a supportive diet to be effective. Food is essential for achieving any body composition goal. I call it a body composition goal because it is focused on how your body looks, whereas a fitness goal is what your body can do, like 20 push-ups or 3 chin ups or run 5 miles. Goals can be fun challenges but also aren’t necessary, it okay to just move your body without any expectations and enjoy the endorphins! 

It really is food choices which influence how your body looks, your energy levels, your mood and how you feel in general. Your body needs fuel to function at an optimal level. 

 

Eat The Rainbow

I love eating colorful, not only is it great for my body but it is fun and usually pretty Instagrammable 😉 There are so many naturally colorful foods available to us and it is crazy how yummy they all are. In the fall you get more orange and yellow through squashes, and in the summer you get more blues and red from all the fresh berries. Greens are the easiest to come by and of course so good for you. When you can find 4-5 vegetables you really like it makes eating them a whole lot easier. Salads, rice bowls, stir fry, smoothies, omelettes, and especially pizza can all be amped up with vegetables. 

Listen To Your Body

If this blog post has made you a bit uncomfortable about your eating habits, start by evaluating your relationship with food. Do you restrict then binge? Eat processed food all the time because you crave it so you don’t want to restrict? Do you restrict your calories because you don’t workout? Do you try every fad diet with fluctuating results over and over again?

Now ask yourself… WHY?

There is a deeper meaning to all of our relationships with food and sometimes we use it to soothe or punish. Not necessary, and not fun. Moving past this can take some time and digging but it’s worth it. Reach out to a Dietician for support!

It can take a long time to find your equilibrium with food but once you get there you will find everything gets a little easier. Remember harsh restrictions always fail, you can’t retrain your brain in a day, and take care of yourself first.

Home Decor: When to Splurge and When To Save

Home decorating is likely the most time consuming part of moving into a new home, but also the most fun. There are so many options and styles these days. We moved into our house just over a year ago and have taken our time with each room. Some things came together quickly and sometimes I still feel like we’re going through drawer by drawer and optimizing our space. 

As you can probably guess, decorating a house is one purchase after the next. Everything from painting an accent wall to the coasters on the table costs money and, to be honest, it adds up quickly. But you are creating your home! The place you spend most of your time, and it should be beautiful and an enjoyable space to be in. I’m here to break down where we splurged and where we’ve saved and some lessons we’ve learned along the way. 

 

Gather Your Home Decor Inspiration 

So you’re scouring the internet for design inspiration, you’ve been saving photos for the last year and when you’re in line for coffee you find yourself searching for the perfect sectional couch for the living room. Pinterest boards are a great place to store all of your ideas, and did you know you can upload your own photos to boards on Pinterest? Any photos you find on google or maybe someone’s blog, just go to your photos and click the arrow like you are going to send it to someone and click the Pinterest logo – helpful right? There’s nothing worse than having a pile of screenshots on my phone (although I am guilty of that too), a Pinterest board, saved images in Instagram and a link I texted to Chris all scattered about. I want all the inspo in one place so I don’t forget any of my good ideas. 

Where to Splurge When Decorating Your House 

My hard and fast rule is to splurge on the rooms you spend the most time in and anything you’ve been daydreaming about for years. 

Have you held any daydreams since you were a little girl? I always wanted a swing in my backyard so even though I don’t spend a ton of time there, it’s been in my head forever and I’m going to have it. Maybe for you it is the white picket fence or the huge bookshelves that could hold more books than you could ever read, whatever it is – make it happen. This is your home and your space, it should feel special to you!

When it comes to where you spend most of your time it will likely be the kitchen, bedroom or living room. These are the popular areas of the house that will be very lived in and you want them to be a place you love to be and be durable as far as furniture goes. 

 

The Bedroom 

I’ve made our bedroom my priority room. I need a super controlled bedroom environment to ensure I can sleep (day or night) so we splurged on our bed, mattress included, linens, blackout window coverings, AC, and noise machine. This might seem like overkill but when working shift work sleep is very important and sometimes hard to come by so I have set myself up for success. Our bedroom makes me very happy and even though it is only C and I that see it, it was worth all the money we splurged on it. 

The Kitchen

I definitely suggest investing in quality appliances when it comes to your kitchen. If you chose a bottom of the line set, chances are one of them is going to give you headaches and if you have to replace it within a few years then suddenly you don’t have a matching set anymore plus you’ve likely paid for repairs. Then, not so slowly, you’ll replace each one and before you know it you’ve paid twice and a high quality set would have lasted you twice as long or more! Other things to invest in for the kitchen would be good knives and for us, a coffee maker (or two)! 

Hiring A Professional

Okay, you are building your dream home, sometimes you might need a professional’s touch. Interior Designers do amazing work and can really make your Pinterest board come to life. A professional will streamline the process and have it move in ready within a matter of days of the walls being painted. They can just picture a room and design the whole thing in their head. It’s wizardry to me haha. I mean I feel like I can put a room together but it takes a lot of trial and error. I think I rearrange the shelves in our living room weekly. 

An Interior Designer will also likely have access to more exclusive accent pieces and can get you better deals on almost everything (something I learned). Make sure you are not afraid to say you dislike something they suggest, this is your home in the end and you want it to be suited to your preferences. So if a professional is in your budget and time frame you won’t regret it! 

 

Where to Save When Decorating Your Home 

Alright so you’re splurging on your favorite rooms and an interior designer if you can make it happen! Now, where to save.

Plants

Real or faux they liven up any room and are very trendy right now. Everyone is hashtagging plant Mom and if you aren’t talking to your plants you probably aren’t doing it right. 

As I’ve proven you do not have to be a green thumb to keep a plant filled home, there are many faux ones that look real and many real plants that are very low maintenance. Plants are going to pump some nice clean oxygen into your home and brighten the mood and environment. I would recommend putting faux in the rooms you don’t go into often, since you’d likely forget to water them, and live plants where they can get sunlight and in your main living areas. For me, I have accepted that (almost) all of the plants in my home will be faux. You can read more about why, and my favorite faux babies HERE. I’m a #PlantKiller. 

Rugs 

The spectrum of price tags on rugs is very very vast. But there are definitely affordable options. If you have pets and children, (or maybe just a messy husband), rugs can be a lot of work to keep clean and in good condition. Find some budget friendly rugs that are interchangeable around your home. Make sure more durable ones are used in high traffic areas and the more dainty rugs are placed somewhere for looks. Consider your pets when making this purchase! I can speak from experience, it hurts (my pride and pocket) terribly when you spent 1K on a rug that your dog destroys and you have to tell your husband he was right in suggesting a more affordable Costco rug. Speaking of rugs, we just got a new one from Boutique Rugs! Love that site because there are a TON of affordable options with free shipping. 

Decorative Books

I know coffee table books are classy and beautiful and they do really add a sophisticated touch to a room but you don’t need to buy an $85 picture book to look classy. Instead go for a few travel magazines and fan lay two or three for a cute spread. If you’re going for a simple bookshelf look checkout Etsy, they have lots of hollow/fake books that look real and buy purchasing through Etsy you are likely supporting a small business! I have a mix, but it breaks my heart when the gorgeous expensive books just sit there. Open them up every once in a while!

Dishware 

This is a big one, I know the aesthetic of all matching dishware and the perfect silverware is important but it does not mean it needs to be super expensive. Places like Ikea or Target have a ton of matching, colored dishes, cups, mugs, etc. that go with any color scheme. 

Outdoor Furniture

Entertaining is so fun and we enjoy hosting but people really don’t care what they are sitting on, they just want to be in good company. Second hand outdoor furniture is a great option and always on the market since people tend to need different sizes when they move. We love comfortable but low maintenance outdoor furniture. Again, my heart breaks when an expensive piece is ruined by weather. I learned that lesson the hard way, so we always try to save in this area. 

Seasonal Decor 

I go back and forth on this one. Part of me says, “buy the expensive seasonal decor and use it for 10 years” and part of me says “go with the Homesense or Target options and find new fun stuff annually”. In the name of waste we have invested a bit more in our Christmas decor. But you know I love picking up a few festive things from Target, who can say no?! Budgeting Bottom Line 

Do not rush the process of decorating! Decorating is everything from wall color to furniture to coasters on your side tables so do not be afraid to plan it down to the last little thing and take your time piecing it together. Finding the perfect piece is way better than just finding something that “will do for now”, don’t waste your budget just to be buying something else later. It is worth the wait to find that perfect piece, but if you are in front of a one-of-a-kind and you love it, go for it!! Don’t risk regretting whatever you didn’t buy because you second guess yourself. I’ve been there!

Travel during the time of COVID

Yay or nay to the travel thing?

Stress is high and everyone is unsure about that big question – should I travel?

You can look at it from a couple different ways; is it a necessity, is it a priority, or is it because you are just over it and done with being stuck at home? We personally have been doing both but focusing on the staycations and state-wide road trips. Honestly, they have been a blast! We are usually the first to jump on a plane to a new adventure and have now realized we have been missing out on little California. Everything from our neighborhood to Northern California has been a nice, soothing adventure. We are slowly checking off popular areas within driving distance that we have never been. It’s nice to not worry about luggage limits, liquids, and any staycation can be elevated with matching pajamas and room service! 

Whatever you choose there are some things to consider such as driving vs flying; air bnb vs hotels, and tourist sites vs staycations. 

 

Soar high vs. Stay local

When it comes to flying or driving we are favoring the driving option because you can control your vehicle environment. You can also get lots of uninterrupted time with your partner which is not necessarily rare these days but is a great opportunity to make sure you are both unplugged. C and I have been planning our road trips with epic playlists because who doesn’t like driving around California singing at the top of your lungs?!  

Planes (and airports!!!) on the other hand may be crowded and this can mean opening up your exposure zone. While wearing a mask and washing your hands frequently can help, we all know that airplane travel never makes you feel great. I tend to keep an open mind during these times, but if it is not a necessity, my vote is to sit this one out.

Also consider your airplane final destination- is it an area with a high number of COVID cases? Consider the possibility of quarantine when you return, depending on your employer’s requirements. Some areas are also limiting tourists from coming IN, so if you’re traveling far, do your research.

 

Accommodations 

No matter if you are staying local or traveling a distance, it is comforting to know that hotels and Airbnb’s are being held to crazy strict cleaning regulations. You usually get what you pay for but you should be able to trust everyone is doing their part. That being said, C and I have opted to stay at larger hotel properties that can confirm their protocols including the percentage rate at which they are booking. Most of the hotels we have visited were booking at 25% only.  We have noticed significant care on any staff members’ part with cleaning and maintaining social distancing for the guests. Some hotels even provide emergency PPE kits (gloves, sanitizer, masks, sani towels). While I have noticed excellent reassurance on AirBnb properties listed online (when planning), it was easier for me to speak with hotel personnel and there were many more reviews I noticed. I always ask about dining options including need for reservation as well as social distancing protocols at the pool or within common areas. 

Wear your masks to check in, wash down surfaces yourself and bring a sanitizing spray if you want to be 100% sure. Make sure when you are booking online that you are confirm with the host or a staff member. It would be awful to get there and have no bed because of an online glitch. It might be best to book directly with the place itself versus through a third party as far as cancellation and refunds go. Many places are restricting access or shutting down completely so do your research! I have said this already but… we have put most of our travel budget into hotel accommodations (as opposed to airfare, food, activities) this year, and it has not failed us yet! You need a sure thing, when it comes to accommodations. 

 

Be smart, protect yourself

I have talked a bit now about wearing a mask, yes I know you have the right to choose not to, and there are special cases, but let’s all just support each other and be kind in these tough times. That mask could help make others feel more comfortable and that gesture can go a long way. Mask etiquette is pretty easy- do not touch it or your face, wash it everyday and smize those eyes. But seriously though, stop taking off your mask to talk to people in the store or moving it below your chin/nose – it defeats the purpose.

Get that sanitizer flowing, but make sure it is regulated. There are nice lists provided as to what is safe and actually works – avoid the fragrance and dyes, they are unnecessary but confirm you’ve got at least 60% ethyl alcohol, that is key!

When you are traveling, always but especially now, make sure you are wiping down public surfaces. I always do this when we get on planes but now it makes me think about gas stations, grocery stores and door knobs etc. 

 

Stay out of my bubble

Social Distance – repeat it with me Soc-ial Dis-tance! It is really not that hard, and seriously who wants to be that close to strangers anyway? I am a front line worker, I know that people like to get all up in your bubble but when you can control it, take a step back – or two. You might not be scared of getting sick but be considerate of others. Indoors and outdoors (in populated areas), wear your masks and maintain social distancing whether it is required or not.  Traveling is no exception – make sure you are up to date on the current guidelines to any place you are encountering along your travels. There may be some local or not so local hot spots of the summer you are wanting to go checkout, just remember you are a guest in their space and as much as they love the tourism support they are just as scared. This includes look out points if you are road tripping. We encountered a large amount of people who wanted to see all the same attractions as us, so keep that in mind when planning your trip. 

Plan ahead and pack accordingly

If you are deciding to travel make sure you know and respect if you have to quarantine. This guideline is put in place for a reason, no one is above it. Plan ahead and make sure you are able to get groceries delivered, park in one location, and have enough activities/work to keep you busy in your quarantine bubble. 

Also make sure you have planned enough time if you also have to quarantine when you get back – this is a month long process if you consider both ways, without travel days in between. That is a lot of time to consider just to travel away from your state. If quarantining on both ends is mandatory I’m confident you can find the beauty around you and take comfort in your local area! 

 

Love your locals

You might think you know the area where you live like the back of your hand but there are likely some activities/locations/restaurants you have yet to discover. What do tourists do when they come to your area? Have you taken advantage of those hikes, mini golf courses or restaurants? Get out of your normal habits and venture out. Even the smallest thing like running a different route or driving a different way to work can have you looking at your neighborhood in a new way. 

Bottom line 

You are allowed to travel! It doesn’t have to be stressful and you don’t have to feel guilty for wanting to go. Just ask questions and stay safe. If you’re set on staying home but getting stir crazy, opt for a staycation or a neighborhood adventure. Stick with your support system and if you need some new ideas for being close knit at a distance check out some tips we have been trying. Now go enjoy the last of the local farmers markets, and summer soaked beach days (with social distancing in mind) and keep washing those hands!

Road Trippin’ Up the Coast

We all know that travel looks a little different this year… need I elaborate on 2020? No, I don’t think so. C and I decided eventually that we were comfortable with travel, but we changed some things up from our usual.

Since international travel isn’t happening this year, C and I decided to appreciate the beauty of our own state. We surprisingly realized that because our focus is usually on international and out of state travel, we have missed some really beautiful areas of California!

My mom grew up near Monterey, so I have many childhood memories of there, but really hadn’t been in years. C had never been there! A road trip seemed like the best option, the coastal route of course. Monterey is about 6 hours from Orange County, so we decided to break up the trip with a couple of nights in Santa Barbara too.

Both C and I fully expected some cooler weather up north and packed our sweatshirts, but of course as luck would have it, there was a heat wave! There were so many naturally beautiful landmarks on our way up the coast, that it didn’t matter if we sweat through our masks. This is a trip I would highly recommend, and drive if you can!

Santa Barbara

Belmond El Encanto this is a gorgeous property in the hills of Santa Barbara with insane views. It’s peaceful, quiet, and guests were spread out with plenty of space. We ate at their restaurant which has fabulous views. *Bonus* they offer free transportation within 5 miles.

Santa Barbara Winery– the oldest winery in Santa Barbara. They offer tastings out on their patio, all local wines!

Deep Sea Winery– one of my fave places to have wine in Santa Barbara. They’re located on the pier with epic views. Currently not serving tastings because of restrictions, but they are serving glasses of wine.

The Lark– great foodie spot! The menu is a little smaller than usual right now, but still did not disappoint. Huge outdoor seating areas.

Renaud’s Bakery– locals recommended this spot. We had an egg and cheese croissant that took us back to our summer in France last year!

State Street Shops– because of COVID and outdoor dining, a portion of the street is blocked to vehicle traffic, so you can roam the street and there are lots of outdoor dining options. Shops are open and so many to choose from!

 

Pebble Beach/Carmel/Monterey

The Lodge at Pebble Beach– I was super impressed with this hotel. Yes, it is a pretty penny, but they had their you-know-what together. They have two other accommodations- The Inn at Spanish Bay and Casa Palmero, which I’ve heard are great also. We had a room overlooking the first fairway (which C loved), and it was spacious! Our only issue was with dinner reservations, because they were so limited in tables and it was outdoor dining only. We ended up getting very lucky and were able to eat at all three of their restaurants despite not having reservations. The food and views are EPIC. I highly recommend any of their restaurants if you are traveling here. They also have tons of beautiful deer on the property!

17 Mile Drive– we had the hotel shuttle take us to one of the stops (Bird Rock) and then we walked to a couple of the other attractions and back to our room. If you don’t want to drive the whole thing, I highly recommend Bird Rock, Seal Rock, and The Lone Cypress. The water is SO clear, the homes along the road are GORG, and the fresh air is so relaxing. There were a ton of pedestrians BUT the road is very narrow and there is no specific area for pedestrians.

First Awakenings in Pacific Grove– very popular breakfast spot! They got on my good side when I found out they’re serving pumpkin pancakes early this year! They have a waitlist that you can add yourself to, before you even get on property so I suggest doing that first thing if you’re planning on going. The wait was around 90 minutes but you don’t have to show up until 15 min before you’re up next on the list.

Fisherman’s Wharf in Monterey– the BEST clam chowder in town is offered here. Old Fisherman’s Grotto was the spot I used to frequent, but we found out there are other restaurants on the pier that partner with them and offer the same clam chowder! This was key because the wait times were long with COVID restrictions for dining. I suggest waiting for a table with a marina view, it’s SO worth it. The marine life here is so fun, there are always sea lions putting on a show. Clam chowder in a bread bowl is my recommendation! Hit up the candy stores and souvenir shops on your way out.

Carmel-by-the-Sea– the fun to be had here was slightly limited for us because of COVID and the power went out as we were in town. Our dinner reservation had to be cancelled but I know there are so many great food options here. If you like French dining, you’re in the right spot! We stopped at a couple of wine tasting rooms and shops along the way. I highly recommend The Cheese Shop, where you will find anything you need for the perfect charcuterie board.

Big Sur

Bixby Bridge– between Monterey and Big Sur, this is a MUST STOP for a photo. There are multiple different views of this bridge and areas where you can pull off the road and stop. If you’ve watched Big Little Lies, the intro is shot at this bridge and it is GORG.

Nepenthe– the infamous 360º view restaurant, where the views are better than the food (so I hear). We didn’t stop here due to lack of time, but I’ve heard the views are epic and you can’t miss it if you’re taking the coastal route through Big Sur.

Julia Pfeiffer Burns State Park/Beach– we weren’t able to hit the beach because it was closed to tourists. The sand is supposedly purple-is in color at sunset and I really wanted to see it! We also missed the turn out for the state park where you can see McWay Falls, an 80-foot tall waterfall that flows into the ocean. Next time!

Elephant Seal Beach– this is located in San Simeon and part of the fun in driving the coast. These seals are HUGE; they can grow up to 5000 lbs! When we went, there were so many of them- in the water, and on the beach. They are really fun to watch, and flip sand on themselves to stay cool. Highly recommend!

**When C and I initially planned our trip, we had booked with Ventana in Big Sur. I hear this is a Hyatt property and people rave about how you can use points here. It’s very expensive otherwise. We are not Hyatt members, but I was willing to pay the standard rates because they are offering an “all inclusive” package due to COVID. After getting some additional info from other influencers who had traveled there, I found out the food and experience really wasn’t worth the price, so we cancelled and stopped in Santa Barbara instead. Ventana typically offers a rad pool, jacuzzi, and japanese baths, but many of these were closed due to COVID restrictions. They offer glamping which is supposed to be pretty cool but there was no vacancy when we looked.

Post Ranch Inn is another EPIC hotel in Big Sur with even better views, but they had no availability when I called a few months back, and it’s also very pricey. There are a lot of camping options there but we weren’t really in the mood for that this year.

 

Hopefully this guide helps you a little bit, if you’re making your way up the state of California! I can’t wait to go back when it’s cooler. The vibe is so relaxing and there are so many beautiful sights to see!

The Five Healthy Foods You’ll Always Find In Our Kitchen

We’ve all had those weeks where we’re ordering more takeout than cooking. Maybe that’s every week for you, I’m not judging. I would also assume that we all have the goal to cook more healthy meals at home! For Chris and I it comes down to each having a handful of recipes in our repertoire and keeping some staple ingredients on hand so that we can throw something together even when we’re already past the hangry stage. 

Kitchen Staple Foods – Why You Need Them 

The first step in cooking more at home is having a handful of go-to items or meals that you keep going back to. You know, the ones you pretty much buy every time you go to the grocery store? I love trying new items and products but having my staple items for breakfasts and dinner meals is crucial. 

You’re probably already imagining what this is for you; maybe eggs, oatmeal, sweet potato, bananas? Whatever it is, as an adult navigating feeding ourselves, step one is to keep these staples on hand! 

There’s nothing worse than going into the fridge and realizing you don’t have a key ingredient you need, OR you have a bunch of ingredients but nothing that really goes together. It’s like when you shop for clothes and the online order comes with 3 new pieces but you don’t have any tops to pair with the green polka dotted jeans you got… 

Moral of the story here is keep your staples on hand. I’m going to take your through ours and why we love them. Bear with me because these items might seem boring at first glance but it’s the versatility we’re going for here! 

5 Fresh Foods We Always Keep on Hand 

Chicken Breasts 

Chicken is definitely the protein we eat the most frequently. I sometimes pick up a full roasted chicken and we enjoy the dark meat at dinner and save the white for sandwiches and salads. Trader Joe’s Lemon Rosemary Spatchcock Chicken is one of our EASY faves. More often though we’re cooking chicken breasts in the oven or Instantpot. 

As far as protein goes, doing a batch of boiled eggs is great too! Take the extra 5 minutes to peel them while they are cooling down – it’ll help the shell come off better AND you are more likely to eat them since they are 100% ready to go.

Spinach

Let’s be honest, we know a dark leafy green contains way more vitamins than plain only lettuce. Options would be kale, arugula, spinach, chard etc. We both like spinach in salads and it’s so easy to add to almost any dish in the last few minutes of cooking. We toss it into smoothies, stir frys, curries, anything! Dark leafy greens are high in antioxidants and spinach specifically has you covered for Vitamins A and K. Vit A and K are fat soluble so pairing it with a fat such as an olive oil based dressing, avocado on your sandwich, or a nut butter in your smoothie with help with the absorption.

Quinoa and Brown Rice 

We love to have a quick grain prepped and ready as well – for us it’s brown rice or quinoa. Both are gluten free if that’s something you subscribe too. Brown rice is a whole grain and because it keeps that outer ‘brown’ layer it also has more B vitamins and a bit of extra fiber as opposed to white rice. It’s a great grain additive for a fruity salad, in the summer. 

Quinoa is awesome because it’s a high protein grain which really takes to any seasoning you put on it. Make sure you rinse your quinoa before cooking it to avoid that bitter taste. The bitterness comes from something called saponins which the plant produces to keep away insects! Crisp it up on the stove and add to a salad or bowl!

Fresh and Frozen Veggies 

Taking the extra step to prep vegetables goes a long way. We always have fresh and frozen veggies. They have almost the exact same nutrient value so don’t be turned off by frozen. I think it’s more about cooking them in a way you like. We are partial to broccoli, carrots and mushrooms when it comes to fresh vegetables. I also love brussel sprouts, peppers, and green beans! Sautée, roast or enjoy raw with hummus or a greek yogurt based vegetable dip! I just ordered a new pan from Amazon that “grills” veggies perfectly! 

Ezekiel Bread

This is a high fiber bread made by allowing the grains to sprout. Ezekiel is much higher in nutrients than your regular loaf of white for a few reasons. From one it’s made from multiple grains, not just wheat flour like most breads, so you get a wide variety of vitamins. Sprouting the grains also increases the benefits. Ezekiel bread also contains legumes which increase the protein and fibre content. There is no added sugar (most breads don’t have unless you’re getting a sweeter bread product). Lastly, the Iron and calcium content is high while it being a vegan product, so no eggs, dairy or milk if that’s important for you! We load up ezekiel bread with avocado or peanut butter and banana. Add Everything-But-The-Bagel seasoning to the top of your avocado toast, it’s amazing!

 

Why Perfect Your At Home Cooking Routine?

Bottom line is that if I know there is something prepped at home, or something I can easily throw together I’m less likely to pick something up on my drive back. Sorry Sweet Green, not today! 

Chris and I take turns both cooking and picking up the groceries. We are both pretty in tune which eat other’s likes, dislikes, and habits at this point. Having that is huge for us and it really helps with the flow of our kitchen time and meals. 

Aside from meal staples other things to consider would be healthy snacks! Both of us are often packing lunches. I love to throw in a Rise Bar or Perfect Bar, mixed nuts or a trail mix with dried fruit, greek yogurt, chia seed pudding, or bananas/apples. At home we love eating popcorn for a snack too! Lesser Evil coconut oil with Himalayan salt is my fave!

Having your staple foods, healthy snacks, and some non-perishables will go a long way during your week. It saves time at every meal and saves money that might otherwise be spent on food or delivery.

My LASIK Experience

One of the biggest miracles I have personally witnessed thus far in life, is the gift of perfect eyesight. I chose to have LASIK back in 2011 and it was the most difficult, yet BEST decision of my life. Let me start by telling you about one of my fears: if someone wanted to kidnap or kill me… all they would’ve had to do was steal my glasses while I slept. I WAS BLIND.

This blog post is about my experience as a LASIK patient, and honestly I am no expert in ophthalmology. If you have specific medical questions regarding the procedure, consult with an ophthalmologist.

I was a medical student at the time, living in Columbus, OH. Luckily, I had access to an amazing panel of ophthalmologists that worked for The Ohio State University, where I was a student. I knew I wanted LASIK for a while, but the thought of a laser cutting into my eyeball scared the living daylight out of me! Truthfully, I’ve never been a fan of eyes, even as a doctor.

Pre-procedure

The process of finding the right doctor is crucial. I needed someone not just to fix my eyes, but coach me through the process. We’ve talked about this before… I am not the most ideal patient! Since I had friends in the field, they recommended someone and I knew he was the one the first time I met him. Dr. Amit Tandon was my LASIK surgeon and he definitely made the experience 100 times better than it could’ve been with a less personable and understanding physician.

In the time leading up to the procedure, I went through a series of tests to determine if I was a good candidate. The cornea needs to be thick enough to tolerate shaving off some layers (hope you’re not eating as you read this). Typically the eyesight should also be stable for a couple of years, to make the procedure worthwhile. Lucky for me, I passed all of the tests somehow!

As a medical student, I was lucky enough to be able to shadow the procedure. This definitely helped with my anxiety surrounding the actual steps of the surgery. I remember going on a cruise in the weeks prior to my surgery, as a celebration for finishing my Step 1 USMLE test, and I had to wear my glasses (they ask you to do this prior to your surgery) which I hated. That was when I said goodbye to my insanely thick Steve Urkel lenses!

What I started with

I wore glasses for nearsightedness as long as I could remember, and my prescription would worsen every year. Before I knew it, my glasses seemed to be an inch thick! I couldn’t see out of them well, so I wore contacts as much as I could. Over time my eyes became super irritated and dry with my contact lenses, and it was miserable. I tried drops, plugs, everything. I was a chronic studier and whether I wore my contacts or my glasses, I just couldn’t see very well.

For those of you that can relate, my prescription was -8.00 in both eyes. For those of you that have no idea what that means… it’s BAD.

Many patients with severely poor eyesight are not candidates for LASIK. Of course it depends on a multitude of factors but the worse your eyesight is, the less likely you will have a perfect result. I chose to ignore this. My doctor was confident, although he did warn me that we may not reach a perfect end result. Anything to me was better than the terrible eyesight I was dealing with.

The procedure

Luckily I was given some valium prior to the procedure, it was necessary for me to sit still and keep my eyes open while a laser blazed through them! They place a suction cup-type device around your eye (like a BP cuff for the eye) and it hardens the surface so that the laser can make a clean cut. That part terrified me because it can temporarily occlude the artery and make your vision go dark. It doesn’t cause any lasting damage, but it scared me. So much so that I kept tensing up and it would pop off of my eye, which terrified me more! Once I got past that part it was smooth sailing and the procedure was totally painless. Overall it was quick, easy, and I was up and laughing within a few minutes.

Post-procedure 

I expected this part to be easy, because most patients I had spoken with said it was “painless and easy”. Unfortunately this part was not painless for me. After the procedure my eyes were very sensitive to light, which is typical. I wore big, thick sunglasses out and it helped. I forgot to bring my Tylenol PM to the procedure with me however, so by the time my dad got me home my eyes were on fire. It took a while to work with the pain being so severe, but once I fell asleep the most painful part was over. I’m told by many that this was not their experience, so it probably had something to do with my severe near sightedness. Below is raw, unfiltered footage of me immediately post-LASIK… before the fire in my eyes set in!

When I woke up a few hours later I could sort of see without glasses, but it was still very blurry. The average LASIK patient says they have perfect vision at this point. Again, not my experience. Over the next few days my vision became better and better, but I had trouble seeing up close; the reverse of what I had dealt with prior to the surgery. There was a short period of time in which I actually wore reading glasses. It seemed like my eyes were changing little by little, everyday. The typical story of patients being back to work and perfect within a day just wasn’t part of my journey.

I started my third year of medical school a few days after my procedure and my first rotation was internal medicine, so there was a lot of reading, note taking, and rounding on patients. I experienced headaches with my vision changes and went through a period of days where I felt like maybe I made a mistake. Dr. Tandon was super encouraging and remained optimistic, which helped of course. It took a period of weeks before I was able to ditch the reading glasses and all of a sudden noticed that my vision was pretty perfect!

LASIK Side Effects 

My vision is fabulous in bright light/daylight however I do notice less clarity at night time. I have large pupils at baseline and in a dark setting, pupils dilate. I knew that a starburst or halo appearance around lighting at night was a potential likely side effect for me, because of my pupil size. While it has improved over the years, I still notice some of these effects at night. It doesn’t bother me unless I’m driving in a very dark area that I am unfamiliar with. There are eye drops that improve these symptoms, but I choose not to use them on a regular basis.

Dry eyes are another very common side effect of LASIK. I noticed this was moderate to severe for me after the procedure but has greatly improved over the years. I used to carry artificial tears with me and use them throughout the day, but I now only need them in the morning. Depending on the weather, I will notice increased dryness, but nothing that artificial tears can’t improve.

LASIK in hindsight

Overall, I had an interesting and slightly unusual experience with LASIK, unlike many others. I can still say that I am so grateful to have been given the gift of perfect eye sight! The past 10 years have been so much easier and more comfortable without the added stress of glasses or contacts. I still have 20/20 vision in both eyes, and only wear blue-light blocking glasses at night and sometimes at work. If you’re thinking about LASIK, my biggest piece of advice is to find a doctor that you LOVE. Don’t go for the “good deal”. When undergoing any elective procedure, you should feel comfortable and encouraged by your physician, never pressured. Also good news… it’s 2020 and there are many other vision correcting options available as well!

The Must Have Summer Accessory of 2020

I’m a doctor so maybe you saw this one coming. The hottest accessory of your 2020 summer is, your MASK baby! Let’s talk about how to style your mask so it doesn’t totally kill your vibe. Masks are now mandatory in most places which means that it’s time to accept the fact that they’re now part of our wardrobe. I know that every place is different but if masks are mandatory in your grocery stores or other public places, there’s no reason not to be comfortable or dress it up. When our reasons to go out are so limited, we might as well rock a cute summer outfit top to bottom when we can, mask included!

Collect Them

I’ve found myself becoming a bit of a mask collector for two reasons. Firstly, it’s highly recommended to wash your mask after every use. Having a few of them on hand helps to lessen the amount of washing that you’ll do and save yourself from a nightly load of laundry. Plus, having a collection means that you can mix it up and match your mask to your outfit. Oh, what a world we live in!

Make Your Eyes Pop

Once you’ve found the mask that goes best with your #OOTD, consider the fact that your eyes and brows are now your key facial feature – so you can get a little extra here! I don’t recommend wearing a full face of makeup with a concealer and foundation because it’s hard for your skin to breathe inside that mask. If you’re anticipating a lot of mask-wearing, keep it to the eyes only. Let’s be honest ladies, this is a huge win for us! 

My favorite brow product right now is the Benefit Foolproof Brow Powder. Each shade comes in two different tones so that you can build your brows naturally. There’s a two-sided applicator to ensure the perfect look. My favorite mascara ranges between two right now. Keep those eyes popping with either the Bobbi Brown Smokey Eye Mascara or anything by Chanel. Right now, I’m loving the Le Volume de Chanel mascara! Both of these products do an amazing job of keeping my lashes looking full and long whether I’m wearing a mask or not. We finally have a reason to perfect our “smize”.

Find a Hairstyle that Works

I find that hairstyling with a mask is slightly more difficult. If your masks pull at your ears in a certain way, it might be unflattering to wear your hair down or in certain other styles. Find what works for you and have fun experimenting! My go-to has been a low bun or french braid (so high school for me). Of course, I’m used to masks from working in the ER, but I always like to keep my hairstyles fresh at work too! Keeping your hair out of your eyes is key. If you’re wearing a mask for any reason, it’s important not to touch it, your face or your hair. So find a style you love that keeps it all out of the way.

I have seen some of the nurses wearing space buns, and putting the mask elastic around the buns to save their ears (SO creative). There are also many different “ear savers” that you can attach behind your head to prevent that pull on your ears!

My Faves

I’ve been fortunate enough to find some masks that I absolutely adore. You can get masks anywhere nowadays (literally anywhere), but I recommend finding some that you know you’re going to love wearing – even if the price tag is a little higher. A lot of local companies have taken to making their own lines of masks so it’s great to support them where you can. I’m loving these masks from Olivia’s Interior Design and Accents. Olivia’s is local to me and her and her family hand-make these. They come in fashionable, outfit-pairing colors and designs! Plus these are washable, reusable, and have three layers including a filter. And, of course, FIGS created a great line of masks called the FIONx Protective Face Masks. They can go over your N95 mask if you’re working in a healthcare setting or be worn in public for trips to the grocery store or grabbing take out. They come in fun colors and two sizes.

Remember, this doesn’t have to become a painful decision. 2020 is all about pivoting and trying new things, so you might as well make the most out of it. That being said, while all of this is fun to experiment with, I highly recommend buying masks that have a few layers and are also comfortable. Make sure the mask is actually doing the job of protecting you (and others) safe!
